Nearly every shop starts with everyone able to do everything, because it is simpler and because the people are trusted. The problem is not usually dishonesty. It is that mistakes become untraceable: a rate gets changed, a bill gets edited, stock gets adjusted, and there is no way to find out what happened.
Roles solve the ordinary version of this. Each person has the access their job needs, sensitive figures are visible only to those who should see them, and anything consequential leaves a record with a name on it.
Four kinds of control
Roles rather than individual settings
Cashier, storekeeper, purchase, accountant, manager, owner. Access is set on the role and people are put into it, so a new joiner takes a minute rather than an afternoon.
Figures that stay hidden
Purchase rate, margin, total sales and outstanding can all be hidden from roles that have no business seeing them, while billing continues perfectly normally.
Limits on what can be changed
Discounts beyond a limit, editing a saved bill, cancelling an invoice, adjusting stock, changing a rate — each can be blocked, allowed, or allowed only to named people.
A record with a name on it
Consequential actions are logged: who cancelled the bill, who changed the rate, who adjusted the stock and when. Most of the value is that everyone knows the record exists.

Is this complicated to set up?
No, and you do not do it alone. Roles are configured with you during implementation, based on who actually does what in your shop. Most businesses end up with four or five roles.
Can a branch manager see only their branch?
Yes. Access can be limited by branch, so a manager sees their own location and the owner sees everything.
What happens when someone leaves?
Their access is withdrawn without removing anything they did. The history stays intact and attributed, which is the point of recording it.
